Luis Diego Santamaria is the third generation of his family to farm coffee onEl trapiche. El trapiche also produces sugar, cacao and other fruits.
Coinciding with launching coffee tourism in 2005 on their farm, they began to
experiment with various processing methods.
This coffee is an Anaerobic process which means that the cherry is fermented in
sealed stainless steel tanks, instead of the normal open air water tanks, which
creates a more complex cup.
