Colombia Chocoloco is a tribute to the hardworking producers of Saladoblanco, Huila. Developed through a unique collaboration with small-scale farmers, this coffee represents a shared commitment to quality, sustainability, and growth in one of Colombia’s most promising coffee regions.
Each contributing farmer tends to plots averaging just 1.5 hectares - often in challenging conditions. Through Cata Export’s support, these producers receive hands-on training in soil health, clean agricultural practices, post-harvest protocols, and fermentation techniques. The goal is simple yet powerful: to help overlooked farmers bring their exceptional coffees to the world.
Chocoloco follows a carefully standardised process: ripe cherries are first oxidized for 24 hours, then fermented in sealed bags for 90 hours. After manual pulping and an additional 24-hour fermentation, the coffee is gently washed with minimal water. Finally, it’s dried slowly in canopies for up to 20 days until the ideal moisture level is reached.
The perfect brew for anyone who enjoys a brighter, sweeter, more floral coffee with a clean smooth finish.

here's how we do it. we recommend a ratio of 60g of freshly ground coffee for every litre of water. this is a good place to start, but you can fine-tune your recipe to suit your taste. you'll find some suggested brewing ratios of hot water to ground coffee for you to use below. if you have any questions, flick us a message - our team can happily help.
