Introducing our latest natural anaerobic release from Ethiopia - Koke Shalaye.
Bursting with vibrant fruit notes and a juicy, summer-like brightness, this coffee is made for those warm summer days. It’s the perfect match for something sweet and delicate like a Mille-feuille to let every flavour shine.
We’re proud to share this coffee, the people, and the land that bring it to life.
High in the Gedeo zone of southern Ethiopia, small-scale farmers in Koke Kebele hand-select only the ripest cherries and take them to the Koke Shalaye processing station. Over 2,000 local growers cultivate traditional Ethiopian varieties at high altitudes with rich soil and reliable rainfall. The station, established in 2019 by Abreham Mengiste, has already earned recognition for its exceptional quality. The coffee undergoes anaerobic fermentation, where freshly picked cherries are wrapped on raised beds to develop vibrant and complex flavours. After fermentation, the beans are shade-dried in thick layers and closely monitored to ensure perfect moisture. This careful process preserves the coffee’s character and honours the skill and dedication of the farmers behind it.
